A is for...

Apple loaf

half a cup oil
2 small eggs
1 cup sugar
half teaspoon vanilla extract
1 and a half cups plain flour
1 and a half cups diced apple
half teaspoon baking soda (sodium bicarbonate)
pinch salt

Pre-heat oven to gas mark 3/325 degrees F. Combine oil, eggs, sugar, vanilla. Add flour slowly, then baking soda and salt, then apples. Bake in loaf tin for 70mins. Cool in tin, then set out. Serve with custard.

There's currently a big hole in the back garden against the west-facing brick wall, waiting for the apple tree. It will be Falstaff (although mine's coming from the local nursery). I love locally grown fruit in season - can't beat that for local.
